Mmm BBQ...

Barefoot Contessa's Barbequed Ribs

Serves 4 to 6
1/2 c vegetable oil
1 1/2 c chopped yellow onion (2 medium onions)
1 T minced garlic (3 cloves)
1 c tomato paste
1 c cider vinegar
1 c honey
1/2 c Worcestershire sauce
1 c Dijon mustard
1/2 c soy sauce
1 c hoisin sauce
2 T chili powder
1 T ground cumin
1 1/2 t crushed red pepper flakes
2 racks St. Louis pork ribs (4 to 5 pounds)

For the marinade, heat the vegetable oil in a large saucepan over low heat. Add onions and garlic and sauté for 10 minutes, until the onions are translucent but not browned. Add the tomato paste, vinegar, honey, Worcestershire sauce, mustard, soy sauce, hoisin sauce, chili powder, cumin, and red pepper flakes. Simmer uncovered over low heat for 30 minutes. Set aside half of the marinade for serving. (You don't want the sauce you use for dipping the cooked ribs to touch the raw meat.)
Meanwhile, preheat the oven to 350 degrees. Place the ribs on a baking sheet, slather both sides with marinade, and bake for 1 hour.
Place the ribs on a charcoal grill and cook for 3 to 5 minutes until one side is nicely browned. Turn the ribs and close the cover of the grill, making sure the vents are open enough to allow airflow, but not so much that there are flames around the meat. Grill the ribs for 10 more minutes, turning if necessary, until both sides are nicely browned. Place the ribs on a platter, brush with more marinade, and wrap tightly with aluminum foil. Allow to rest for 10 to 15 minutes. Slice between the ribs, and serve hot with the reserved sauce for dipping.

Lunar Moth...

This past weekend I saw for the first time, a Lunar Moth, which comes from a type of giant silk moth. They have long, sweeping lower wing-tails. The normal wing span for Lunar Moths is from 3 to nearly 8 inches across. This nocturnal insect is also found in deciduous hardwood forests in North America, from Canada to Northern Mexico. You can find them in almost any area that has deciduous trees if you hang out near bright lights at the night where they like to buzz around. The Lunar moth starts life as a tiny egg then hatches into a plump lime-green caterpillar with tiny orange spots along the sides. At first the slow-moving Luna caterpillar eats leaves from the following trees: white birch, alder, persimmon, sweet gum, hickory, walnut, and sumac trees. After eating and growing to a substantial size, the caterpillar builds a brown, tent-like cocoon, and will eventually emerge as a fully-grown adult. Finally as a mature adult the Lunar Moth doesn't ever eat, instead it searches only for a mate so that it can breed and then it dies, which ranges from the span of 24 hours to 7 days.

Rainy Day Movie...

Go see Forgetting Sarah Marshall, it's Nicholas Stoller's 'romantic disaster comedy' - which is just a fantastic genre in it's own right. It was produced by the same team that did 40-year old Virgin and Knocked Up. When Jason Segal (Peter) gets suddenly dumped by his longtime television star girlfriend, he gets depressed and desperate to win Sarah back. To escape his sadness and the reminders, he heads off to Hawaii for a much-needed vacation, but discovers that Sarah and her new beau are staying at the same resort. Segel, who gets fully naked several times in the film, wrote the screenplay and is a loveable leading man. Reviews say this comedy is an outrageously funny yet touchingly sweet movie. Ditto.

On the movie's interactive website, get tips for how to get over being dumped, make your own tabloid and more. TGIF! And to the left - answer my poll!

More Green Moms...

The Green movement is making incredible strides all over the globe. One notable newcomer is Chrstine Gardner (my friend Monica's cousin). What began as a research project for her 8 year old daughter’s school, has developed into a research and blog website, specifically aimed at mother’s who want to “green” their lives. More Green Moms launched last week. Relevant to all, it provides literature, best practices, and other helpful resources. Christine says eloquently:

"The story is relevant to all people, whether you are a parent or a pet owner, a Californian or a New Yorker, a male or a female, a conservationist or a voracious consumer, because as Americans, we are linked by a common vulnerability to lax protective measures and loose safety standards that are proving to place us all in harm’s way. It’s so very hard to figure out where the hazards lie and how we can better safeguard ourselves against them. If nothing else, my hope is that this work might catalyze a broader quest for a national demand to protect our people and our natural resources from irreparable damage. Clearly, with the rising rates of obesity, infertility, autism, cancer and a myriad of other ills, we are already paying dearly for our reckless living. But what I find most tragic is that so many of us are skipping along a bright path of ignorance. My sunny journey ended only last summer when I began to truly understand what was at stake in the battle for the American wallet."

A wonderful and compassionate mission statement that will hopefully help to spread awareness and further each of our communities' positive environmental efforts. I admire her initiative!
Also, you can go to TIME magazine's weekly column on the environment.

Tri for fun...

Ready to Try? I did a few spring triathlon's a years ago in the San Francisco area. My favorites were Tri for Fun , and the Tiburon Triathlon which you could relay as well.
