A London excursion...

Littlehampton is a beautiful beach town, 20 minutes from Chichester, 30 minutes from Brighton and 90 minutes from London. West Beach with boating lakes, pretty parks and a nature reserve with rare birds, is a great place for a walk after a long relaxing lunch at The East Beach Cafe. If you're feeling more energetic, there are tennis courts, golf and a good pitch and putt course, all open year round. Bring a cricket set or a kite and play on the green behind the beach, or even try your hand at kitesurfing.

Africa...

2009 is ahead, some things on the list are...plan an African safari! A few stops:

Sarara, a luxury tented camp in Namunyak (meaning 'place of peace') in northern Kenya. Enjoying walking safari's with the Karisia group. Lounging at the Lake Rutundu Log Cabins and the sheltered oasis of Ol Pejeta Ranch House. FlyAir Kenya into the Serengeti, stay at the Sasakwa Lodge and then head off to Rekero Camp. Emmerse yourself in the Maasai culture and african wilderness and stay at the Shompole in Kenya. Lastly, relax on the Swahili Coast and rent a bungalow on the beach.

Bring a camera, binoculars & see Wildabeest, Zebra, Lions, Cheetah, Rhion's, Elephants, Hippos, Chimps, Giraffe and more wildlife along the way.

For more research on planning your trip. About.com has a list of top 10 places to visit and which seasons. You can travel year round, but it's recommended that the best times are June-October and December-February. And the green months (November, March, April, May) are rainy and less expensive.

That was a long time ago for moi! Much to my disbelief, I have a niece who has grown up beautifully right before my eyes and his heading off to college in a few weeks. An early start to get ready for the Field Hockey season. She's a fan of the blog and in honor of her...here are a few things to get in preparation of dorm life!

A few things for the College Checklist:

Hot pot
Other items you will need - all the school supplies: notebooks, pens etc.., for dorm room, trash can, long mirror, laundry detergent, tape and tacks and hammer and nails, extension cords, clothing hangers, tv, alarm clock, drying rack, folding canvas hanging storage, dust buster, fan, flashlight, umbrella, bottled water, fridge, pillow top mattress, bookshelves, picture frames, trunk with lock, pillows, robe, and anything else you can fit in your parents car in bulk, like paper towels, snacks, bottled water, shampoo, soap and all.
And remember...many of the trademark things that only come with age and making mistakes, in a famous speech called Wear Sunscreen.

Swoozie's...

Souffle...

Tomorrow night for a small dinner party, I am making this yummy Goat Cheese & Herb Souffle dish. Adding white corn and asparagus!

7 T grated Parmesan cheese
3/4 c whole milk3 large egg yolks
2 T (1/4 stick) butter
1/2 c chopped red onion
1 t chopped fresh thyme
1/2 t chopped fresh rosemary
2 T all purpose flour
1 c crumbled soft fresh goat cheese (such as Montrachet)

3/4 t salt
1/4 t ground black pepper
Large pinch of cayenne pepper
4 large egg whites

Preheat oven to 350°F. Butter six 3/4-cup soufflé dishes. Place 1 tablespoon Parmesan in each dish; rotate dishes to coat with cheese, leaving excess in dishes. Place dishes on baking sheet. Whisk milk and yolks in bowl to blend. Melt butter in saucepan over medium-high heat. Add onion, thyme, and rosemary; sauté 3 minutes. Add flour; whisk 1 minute. Whisk in milk mixture. Whisk soufflé base until thick and bubbling, about 2 minutes. Remove pan from heat. Add 1/2 cup goat cheese, salt, black pepper, and cayenne pepper; whisk until cheese melts. Beat whites in bowl until stiff but not dry. Fold 1/4 of whites into base in pan. Sprinkle remaining 1/2 cup goat cheese and 1 tablespoon Parmesan over. Fold in remaining whites in 2 additions. Divide mixture among dishes.

Bake soufflés until puffed and beginning to brown on top, about 20 minutes. Serve immediately.

Rent anything...

Check out Zilok online, a rental marketplace for just about anything. A kayak, some power tools, video camera, or a lawn mower perhaps? Maybe a last minute summer house rental, a party tent, or lawn games? Really there is nothing you can't find here. It's very practical in fact, when you consider some of the items you will only use once, or storage space or over-consumption. It's a temporary fix instead of a long-term commitment. I can relate.

JCrew Summer Sale...

In stores, the fashions quickly shifted into the fall season. Here are a few items on sale at J.Crew online that will help to stretch out summer, don't pack away the bikini's yet!

Olema Inn...

Just an hour north of San Francisco is a beautiful quaint, quiet town on the coast of Point Reyes seashore. I have camped, dined, hiked, kayaked, swam and laised at many of the local gems. The Olema Inn in particular is my second fav, next to Manka's, (which is under reconstruction after a 2006 fire in the lodge).

The Inn has 6 rooms and a large dining room that feels rustic and warm, even in it's newly restored glory. It's romantic charm matches the fanstastic food. Olema Inn is where I had the best burger in my entire life! On a crisp winter day December. And I can't even begin to describe how yummy the oysters are or how delicious the butterscotch bread pudding with homemade ice cream tri is...you will just have to take my word for it. Using all local and organic products, the chef never dissapoints.
Here is a peek at the Oyster selection:
Raw
Royal: Caviar & Lemon Zest
Classic: Champagne Mignonette
Felonious: Tobiko, Sauvignon Blanc
Tomato: Spicy Tomato Water & Seeds

Cooked
Dizzy: Bacon, Mushrooms
Serafine: Swiss Chard, Fennel, Herbs
Basil: Herb Butter, Bread Crumbs
Roasted Garlic: Horseradish, Cracked Pepper
