Avocados...

A few years back my good friends used to host an annual guacamole fiesta! It entailed 10 teams of 3-5 people, who had to come up with a unique guacamole recipe. you were judged on taste and presentation (making a replica of palm trees and avocado waves perhaps?). I was inspired recently because another friend's family owns an avocado farm in Santa Barbara. For their annual picnic last weekend, avocado heaven! Here are a few recipes:


Avocado Pie

2 avocados

1/4 cup lemon juice
1 (14 oz) can sweetened condensed milk (not evaporated milk)
1 (9") graham cracker pie shell
Non dairy whipped topping
Chopped walnuts

In blender, add avocados, lemon juice and condensed milk. Blend 3 to 5 minutes until smooth. Turn into pie shell. Cover completely with whipped topping and sprinkle with chopped walnuts. Chill about 3 hours before serving.


Guacamole

3 avocados - peeled, pitted, and mashed
1 lime, juiced
1 teaspoon salt
1/2 cup diced onion
3 tablespoons chopped fresh cilantro
2 roma (plum) tomatoes, diced
1 teaspoon minced garlic
1 pinch ground cayenne pepper (optional)


In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately.
