Gingersnap Cookies...

2 1/4 c all-purpose flour
1 t baking soda
1 t ground ginger
1 t ground cinnamon
1/2 t ground cloves
1/2 t salt
3/4 c butter (room temperature)
1 c packed brown sugar
1 egg
1/4 c molasses
1/4 c candied/crystallized ginger (chopped, optional)

Mix the flour, baking soda, ginger, cinnamon, cloves and salt in a bowl. Cream the butter and brown sugar. Beat in the egg followed by the molasses and the candied/crystallized ginger. Mix the dry ingredients into the wet. Form the dough into small balls, place them on a baking sheet and press them down with your palm. Bake in a preheated 350F oven for 8-10 minutes.
